1/2 cup cornstarch

1/2 cup all-purpose flour

1 large egg

1/2 cup ice-cold water

Vegetable oil, for frying

For the Honey Walnut Sauce:

1/2 cup honey

1/4 cup mayonnaise

1 tablespoon fresh lemon juice

1 teaspoon soy sauce

Salt, to taste

For the Walnuts:

1 cup walnut halves

1/2 cup sugar

1/4 cup water

Pinch of salt

For Garnish:

Chopped green onions

Sesame seeds (optional)

Instructions

Prepare the Walnuts:

    - In a small saucepan, combine the sugar, water, and a pinch of salt. Bring to a boil over medium heat.

      - Add the walnut halves and stir to coat. Cook for about 5 minutes until the mixture thickens slightly.

        - Using a slotted spoon, remove the walnuts and place them on a parchment-lined baking sheet. Let them cool until they harden.

          Make the Sauce:

            - In a bowl, whisk together honey, mayonnaise, lemon juice, soy sauce, and a pinch of salt until smooth. Set aside.

              Prepare the Battered Shrimp:

                - In a large bowl, combine cornstarch, flour, and a pinch of salt. In another bowl, whisk the egg and add ice-cold water.

                  - Gradually mix the wet ingredients into the dry ingredients to make a smooth batter.

                    Fry the Shrimp:

                      - Heat vegetable oil in a deep frying pan or wok over medium-high heat (about 350°F/175°C).

                        - Dip each shrimp into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry in batches for about 3-4 minutes or until golden and crispy.

                          - Remove cooked shrimp and drain on paper towels.

                            Combine Everything:

                              - In a large bowl, toss the fried shrimp with the honey walnut sauce until well coated.

                                - Add the candied walnuts and gently mix.

                                  Garnish and Serve:

                                    - Transfer the honey walnut shrimp to a serving platter.

                                      - Garnish with chopped green onions and sprinkle with sesame seeds, if desired.
