Ingredients

For the Shrimp:

1 pound large shrimp, peeled and deveined

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup cold water

Oil, for frying

For the Honey Walnut Sauce:

1/2 cup honey

1/4 cup mayonnaise

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 cup walnuts (optional, for garnish)

Toasted Walnuts:

1/2 cup walnut halves

1/2 cup sugar

1/2 cup water

Instructions

Prepare the Walnuts:

    - In a small pot, combine 1/2 cup sugar and 1/2 cup water. Bring to a simmer over medium heat. Add the walnut halves and cook for about 5-7 minutes, until they become translucent.

      - Drain the walnuts and spread them out on a parchment-lined baking sheet. Sprinkle with a pinch of salt and allow them to cool. They will become crunchy as they cool.

        Make the Honey Walnut Sauce:

          - In a medium bowl, whisk together honey, mayonnaise, lemon juice, and vanilla extract until smooth. Set aside.

            Prepare the Shrimp:

              - In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper.

                - Gradually whisk in the cold water until the batter is smooth and slightly thickened.

                  - Heat oil in a deep pan or fryer to about 350°F (175°C).

                    Fry the Shrimp:

                      - Dip each shrimp into the batter, allowing the excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Cook for about 2-3 minutes per side, or until golden brown and cooked through.

                        - Using a slotted spoon, transfer the cooked shrimp to a paper towel-lined plate to drain excess oil.

                          Combine and Serve:

                            - In a large bowl, gently toss the fried shrimp with the honey walnut sauce until they are fully coated.

                              - If using, sprinkle the cooled candied walnuts over the top for a crunchy finish.

                                - Serve immediately, garnished with additional walnuts and a drizzle of honey if desired.
