1 pound young or baby carrots, peeled

3 tablespoons honey

2 tablespoons olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon sea salt

¼ teaspoon black pepper

1 tablespoon balsamic vinegar (optional for a tangy twist)

Fresh thyme sprigs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: In a large bowl, toss the peeled carrots with olive oil, honey, fresh thyme, sea salt, and black pepper until they are well-coated.

      Arrange on Baking Sheet: Spread the carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup.
