For the Crust:

1 ½ cups crushed graham crackers

½ cup unsalted butter, melted

3 tablespoons granulated sugar

1 teaspoon ground cinnamon

For the Cheesecake Filling:

24 oz (3 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

½ cup heavy cream

For the Baklava Topping:

1 cup pistachios, chopped (reserve some for garnish)

½ cup walnuts, chopped

½ cup unsalted butter, melted (for baklava layers)

1 teaspoon ground cinnamon

1 package phyllo dough (16 oz), thawed

For the Honey Syrup:

1 cup honey

½ cup granulated sugar

½ cup water

1 teaspoon vanilla extract

¼ teaspoon ground cinnamon

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Crust: In a medium bowl, mix the crushed graham crackers, melted butter, sugar, and cinnamon until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and set aside to cool.

      Make the Cheesecake Filling: In a large bowl, beat together the softened cream cheese and sugar until smooth. Add the vanilla extract, and mix well. Gradually add the eggs, one at a time, mixing on low speed until just combined. Do not overmix. Add sour cream and heavy cream, mixing until smooth and creamy.

        Prepare Baklava Layers: In a separate bowl, combine chopped pistachios, walnuts, melted butter, and ground cinnamon. Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Repeat this process for 6-8 sheets, layering them on top of each other.

          Add Baklava Filling: Sprinkle a thin layer of the nut mixture onto the phyllo dough. Repeat the process until you have 3-4 layers of phyllo sheets and nut mixture, finishing with phyllo sheets on top.

            Assemble the Cheesecake: Pour the cheesecake filling over the cooled graham cracker crust. Carefully place the prepared baklava layer on top of the cheesecake filling.

              Bake the Cheesecake: Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour to avoid cracking.

                Prepare Honey Syrup: In a small saucepan, combine honey, sugar, water, vanilla extract, and cinnamon. Bring to a boil, then reduce the heat and simmer for 10 minutes until thickened. Let it cool.

                  Finish the Cheesecake: Once the cheesecake has cooled, drizzle the honey syrup over the top. Allow it to chill in the refrigerator for at least 4 hours or overnight for the best results.
