Ingredients

8 chicken drumsticks

1 cup fresh peaches, peeled and diced

1/2 cup honey

1/4 cup soy sauce

2 tablespoons Dijon mustard

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

Fresh thyme for garnish (optional)

Instructions

Prepare the Marinade: In a medium bowl, combine diced peaches, honey, soy sauce, Dijon mustard, olive oil, minced garlic, grated ginger, smoked paprika, black pepper, and salt. Mix until well blended.

Marinate the Drumsticks: Place the chicken drumsticks in a large resealable plastic bag or a shallow dish. Pour the peach marinade over the drumsticks, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours (or up to overnight) to allow the flavors to meld.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

Prepare the Grill Basket: If desired, use a grill basket for the drumsticks to prevent flare-ups while they cook. If not, ensure to turn the drumsticks frequently during grilling.

Grill the Drumsticks: Remove the drumsticks from the marinade, allowing any excess to drip off. Place the drumsticks on the grill. Cook for about 25-30 minutes, turning every 5-7 minutes. The drumsticks should reach an internal temperature of 165°F and develop a beautiful glaze from the marinade.

Baste with Marinade: In the last 5 minutes of grilling, brush the drumsticks with the reserved marinade (do not use any that has come into contact with raw chicken) to give them an extra layer of flavor.

Serve: Once fully cooked, remove the drumsticks from the grill and let them rest for 5 minutes. Garnish with fresh thyme if desired, and serve with your favorite sides such as grilled veggies or a fresh salad.
