Ingredients

2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and black pepper, to taste

4 cups mixed greens (arugula, spinach, and kale)

1 cup cherry tomatoes, halved

1 small cucumber, diced

1/4 red onion, thinly sliced

1 avocado, sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, chopped (optional)

Lemon wedges for serving

Instructions

Prepare the Honey Mustard Glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and black pepper until smooth. Set aside.

Cook the Salmon: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the salmon fillets skin-side down. Brush the honey mustard glaze generously over the fillets. Bake for 15-20 minutes, or until the salmon flakes easily with a fork. For a caramelized finish, you can broil on high for the last 2-3 minutes.

Assemble the Salad: While the salmon is baking, prepare the salad. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and avocado. Toss gently to mix.

Add Toppings: Once the salmon is done, let it cool slightly. Break the salmon into chunks and place it on top of the salad. Sprinkle with feta cheese and walnuts, if using.

Finish and Serve: Drizzle any remaining honey mustard glaze over the salad. Serve with lemon wedges on the side for added freshness.
