Honey Mustard Chicken and Apple Skewers

1 lb boneless skinless chicken breasts, cut into 1-inch cubes

2 medium apples (Granny Smith or Honeycrisp), cored and cut into 1-inch chunks

1/4 cup honey

1/4 cup Dijon mustard

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

Fresh rosemary or thyme sprigs (optional, for garnish)

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, salt, and black pepper. Reserve a couple of tablespoons of the marinade for later use. Add the cubed chicken to the bowl, ensuring all pieces are well-coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Prep the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill. Preheat your grill or grill pan over medium heat.

      Assemble the Skewers: Once the chicken has marinated, thread the chicken and apple chunks onto the skewers, alternating between chicken and apple. Aim for about 3-4 pieces of chicken and 2-3 apple chunks per skewer.

        Grill the Skewers: Place the assembled skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).

          Glaze the Skewers: During the last few minutes of cooking, brush the reserved marinade over the skewers for extra flavor.
