Ingredients

For the Honey Garlic Chicken:

500g boneless chicken thighs, cut into bite-sized pieces

3 tablespoons honey

3 tablespoons soy sauce

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon sesame oil

Salt and pepper, to taste

1 tablespoon vegetable oil (for cooking)

1 tablespoon sesame seeds (for garnish)

Sliced green onions (for garnish)

For the Sweet Corn Fritters:

1 cup fresh or frozen sweet corn, thawed

1/2 cup all-purpose flour

1/2 cup cornmeal

1/4 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 cup milk

1 large egg

2 tablespoons chopped fresh cilantro (optional)

Vegetable oil (for frying)

Instructions

Marinate the Chicken:

    - In a large bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, salt, and pepper. Add the chicken pieces, toss to coat well, cover, and marinate for at least 30 minutes or up to 2 hours for deeper flavor.

      Prepare the Sweet Corn Fritters:

        - In a mixing bowl, combine flour, cornmeal, baking powder, salt, black pepper, and smoked paprika. In another bowl, whisk together the milk, egg, and chopped cilantro (if using).

          - Gradually add the wet ingredients to the dry ingredients, stirring to combine. Fold in the sweet corn until evenly distributed. The batter should be thick but pourable.

            Cook the Chicken:

              - Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken pieces (discard remaining marinade) to the pan, cooking for about 8-10 minutes, or until golden brown and cooked through. Stir occasionally to ensure even cooking. Remove from heat and sprinkle with sesame seeds and sliced green onions.

                Fry the Fritters:

                  - In a separate frying pan, heat enough vegetable oil over medium heat to coat the bottom of the pan.

                    - Once the oil is hot, drop spoonfuls of the fritter batter into the pan. Cook for about 3-4 minutes on each side, or until golden brown. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Repeat with remaining batter.

                      Serve:

                        - Serve the honey garlic chicken alongside the sweet corn fritters. Drizzle any remaining honey garlic sauce over the chicken for added flavor. Enjoy warm!
