Honey Garlic Chicken and Vegetable Stir-Fry

1 lb (450g) chicken breast, thinly sliced

2 tablespoons honey

3 tablespoons soy sauce (low sodium)

3 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine honey, soy sauce, minced garlic, and ginger. Add sliced chicken and toss to coat. Let marinate for at least 15 minutes.

    Prepare Vegetables: While the chicken is marinating, prepare the vegetables by washing and slicing them as indicated in the ingredients list.

      Coat Chicken: After marinating, sprinkle the cornstarch over the chicken, mixing well to ensure an even coating. This will help thicken the sauce later and give the chicken a nice texture.

        Cook Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, stirring frequently until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

          Stir-Fry Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, broccoli florets, julienned carrot, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

            Combine & Serve: Return the chicken to the skillet with the vegetables. Pour in any remaining marinade and stir well to combine everything. Cook for another 2-3 minutes until the sauce thickens and everything is heated through.

              Garnish: Remove from heat and garnish with sesame seeds and sliced green onions.

                Serve: Serve the honey garlic chicken and vegetable stir-fry over cooked rice or noodles.
