4 boneless, skinless chicken thighs

1/3 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

1 teaspoon sesame oil (optional)

1 tablespoon rice vinegar

Salt and black pepper to taste

1 tablespoon cornstarch (optional for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together honey, soy sauce, minced garlic, grated ginger, olive oil, sesame oil (if using), and rice vinegar. Season with salt and pepper. Add the chicken thighs and ensure they are well-coated in the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for maximum flavor).

    Preheat Skillet: Heat a large skillet over medium-high heat. Once hot, add a drizzle of olive oil.

      Cook the Chicken: Remove the chicken from the marinade (reserve the marinade for later) and sear the chicken thighs in the skillet for about 5-7 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F/74°C). Transfer the cooked chicken to a plate and cover to keep warm.

        Prepare the Sauce: In the same skillet, pour in the reserved marinade and bring it to a simmer over medium heat. If you'd like a thicker sauce, dissolve cornstarch in a tablespoon of water and whisk into the simmering marinade. Allow it to cook for 3-4 minutes until slightly thickened.

          Combine Chicken with Sauce: Return the chicken thighs to the skillet, coating them generously with the sauce. Cook for an additional 2-3 minutes to heat through and absorb the flavors.

            Serve: Remove from heat and garnish with chopped green onions and sesame seeds. Serve the honey garlic chicken over steamed rice, quinoa, or a bed of sautéed vegetables for a complete meal.
