Ingredients

2 pounds baby carrots, peeled and trimmed

3 tablespoons unsalted butter, melted

2 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper, to taste

Chopped fresh parsley, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help caramelize the carrots beautifully.

Prepare the Carrots: If using larger carrots, slice them in half lengthwise. For baby carrots, you can leave them whole. Place the carrots in a large mixing bowl.

Make the Honey Garlic Butter Mixture: In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, salt, and black pepper until well combined.

Coat the Carrots: Pour the honey garlic butter mixture over the carrots and toss well to ensure they are evenly coated.

Roast the Carrots: Spread the carrots in a single layer on a baking sheet lined with parchment paper. Make sure they have enough space to roast evenly.

Bake: Roast the carrots in the preheated oven for 25-30 minutes. Halfway through the cooking time, give them a good stir to ensure even caramelization.

Check for Doneness: The carrots are done when they are fork-tender and slightly golden brown. Remove from the oven.

Garnish and Serve: Transfer the roasted carrots to a serving platter. If desired, sprinkle with chopped fresh parsley for a pop of color and freshness. Serve with lemon wedges for an extra zing!
