1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 cup jasmine rice, rinsed

2 cups low-sodium chicken broth

2 tablespoons honey

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup broccoli florets (fresh or frozen)

1 red bell pepper, diced

1 teaspoon dried thyme

Salt and pepper to taste

Optional: fresh parsley for garnish

Instructions
 

Prepare Chicken: In a bowl, mix the honey, Dijon mustard, salt, and pepper. Add the chicken pieces, making sure they are well-coated in the marinade. Let it sit for about 15 minutes to absorb the flavors.

    Heat Oil: In a large skillet or pan over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.

      Cook Chicken: Add the marinated chicken pieces to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

        Add Garlic & Rice: Stir in the minced garlic and cook for an additional minute until fragrant. Add the rinsed jasmine rice, mixing it in with the chicken and sautéing together for another minute.

          Add Broth & Vegetables: Pour in the chicken broth and stir in the dried thyme, diced red bell pepper, and broccoli florets. Bring the mixture to a simmer.

            Simmer: Cover the skillet with a lid and reduce heat to low. Let it simmer for about 15-20 minutes or until the rice is cooked and has absorbed most of the liquid. Check occasionally to ensure it’s not sticking to the bottom of the pan.

              Fluff and Serve: Once the rice is tender and the liquid is absorbed, turn off the heat. Fluff the rice with a fork and let it sit covered for 5 minutes. Taste and adjust seasoning if necessary.

                Garnish: Serve warm, garnished with fresh parsley if desired.
