Honey Bacon Roasted Potatoes

2 pounds baby potatoes (red or yellow), halved

6 slices of thick-cut bacon, chopped

1/4 cup honey

3 tablespoons olive oil

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

2 cloves garlic, minced

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with olive oil, minced garlic, rosemary, salt, pepper, and red pepper flakes (if using). Toss until the potatoes are well-coated.

      Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until it's crispy and golden. This should take about 5-7 minutes. Once done, remove the bacon from the pan and set aside, reserving some of the bacon fat.

        Combine Ingredients: Pour the honey into the skillet with the remaining bacon fat, stirring to combine. Add the crispy bacon back into the skillet, and gently mix until everything is combined.

          Roast the Potatoes: Add the potatoes to the skillet and gently mix to coat them in the honey-bacon mixture. Transfer the entire mixture to a large baking dish or sheet pan, spreading the potatoes out evenly.

            Bake: Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and fork-tender, stirring halfway through the cooking time for even browning.
