1 lb ground turkey

1 cup finely chopped spinach (fresh or frozen)

1 medium carrot, grated

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley (or 1 tbsp dried)

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp crushed red pepper flakes (optional for heat)

1/2 cup marinara sauce (for baking or serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

    Mix the Ingredients: In a large bowl, combine the ground turkey, chopped spinach, grated carrot, grated zucchini, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, oregano, salt, black pepper, and crushed red pepper flakes.

      Shape the Meatballs: Using your hands, mix all the ingredients until just combined. Ensure not to overmix. Form the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.

        Bake the Meatballs: Once all meatballs are shaped and placed on the baking sheet, bake in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

          Add Marinara Sauce (Optional): If you like a saucier meatball, during the last 5 minutes of baking, spoon marinara sauce over the meatballs for flavor infusion.

            Serve: Remove from the oven and let them cool slightly. Serve warm with additional marinara for dipping, on a bed of pasta, or as a protein-packed addition to a salad.
