1 medium onion, finely chopped

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

2 cans (14.5 oz each) fire-roasted diced tomatoes

4 cups vegetable broth

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

1 cup heavy cream (or coconut cream for a vegan option)

1/2 cup fresh basil leaves, chopped

Fresh basil leaves and croutons for garnish

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onions, garlic, carrot, and celery. Sauté for about 5-7 minutes or until the vegetables are softened and the onions are translucent.

    Add Herbs and Spices: Stir in the dried oregano and red pepper flakes (if using). Cook for another minute until fragrant.

      Incorporate Tomatoes and Broth: Add the fire-roasted diced tomatoes (with their juices) and vegetable broth to the pot. Stir in the sugar, and season with salt and pepper to taste.

        Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let the soup simmer for 20-25 minutes, allowing all the flavors to meld together.
