1 cup Arborio rice

2 cups chicken broth

1 cup fresh mushrooms, sliced (cremini or button)

1 cup cooked chicken, shredded or diced

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth: In a medium saucepan, heat the chicken broth over low heat and keep it warm throughout the cooking process.

    Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil and butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

      Add the Garlic and Mushrooms: Stir in the minced garlic and sliced mushrooms, cooking for an additional 5-7 minutes until the mushrooms are softened and have released their moisture.

        Toast the Rice: Add the Arborio rice to the skillet and stir for 2-3 minutes until the grains are well-coated with the oil and butter mixture and slightly toasted.

          Deglaze with Wine: If using, pour in the white wine and stir continuously until it has mostly evaporated, which should take about 2-3 minutes.

            Incorporate the Broth: Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Allow each ladleful to be absorbed before adding the next. This process should take around 20-25 minutes.

              Add Chicken and Cream: When the rice is al dente and creamy, stir in the cooked chicken, heavy cream, and grated Parmesan cheese. Season with salt and pepper to taste.
