1 tablespoon olive oil

1 medium onion, diced

2 medium carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

6 cups low-sodium chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 teaspoon dried thyme

1 teaspoon dried parsley

1 bay leaf

2 cups egg noodles

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
