1.5 lbs boneless, skinless chicken thighs

4 cups chicken broth

1 medium onion, diced

3 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

2 bay leaves

Salt and pepper, to taste

3 tablespoons olive oil

1 cup milk (preferably whole or buttermilk)

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup unsalted butter, melted

Fresh parsley, for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.

    Season the chicken thighs with salt and pepper, then add them to the pot. Pour in the chicken broth, and add the dried thyme, dried parsley, and bay leaves. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 25-30 minutes, or until the chicken is fully cooked and tender.

      Once the chicken is cooked, remove it from the pot and set aside to cool slightly. Keep the broth simmering. After the chicken has cooled, shred it into bite-sized pieces using two forks. Return the shredded chicken to the pot, discarding the bay leaves.

        For the dumplings, in a mixing bowl, combine the flour, baking powder, baking soda, and salt. In another bowl, mix together the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix; a few lumps are fine.

          Drop spoonfuls of the dumpling batter into the simmering broth, making sure they are not overcrowded in the pot. Cover the pot tightly with the lid and let the dumplings steam for about 15 minutes, without lifting the lid, until they are fluffy and cooked through.

            Taste the broth and adjust the seasoning with salt and pepper, if necessary.
