Homestyle Chicken and Vegetable Pot Pie

2 cups cooked chicken, diced

1 cup carrots, diced

1 cup celery, diced

1 cup frozen peas

1 medium onion, chopped

2 cloves garlic, minced

1/4 cup all-purpose flour

2 cups chicken broth

1/2 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon butter

1 package refrigerated pie crusts (2 crusts)

1 egg, beaten (for egg wash)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Sauté Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion, diced carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften. Stir in the minced garlic and cook for another minute until fragrant.

      Make the Filling: Sprinkle the flour over the sautéed vegetables. Stir well to combine and cook for 1-2 minutes. Gradually pour in the chicken broth while stirring continuously to avoid lumps. Then, add the heavy cream, thyme, rosemary, salt, and pepper. Bring the mixture to a gentle simmer and cook for another 5 minutes until the sauce thickens.

        Add Chicken & Peas: Stir in the diced chicken and frozen peas, mixing well to coat the chicken and veggies in the creamy sauce. Remove the skillet from heat and let it cool for a few minutes.

          Prepare the Pie Crust: Roll out one pie crust and place it into a 9-inch pie dish. Pour the chicken and vegetable filling into the crust, spreading it evenly.

            Top with Second Crust: Place the second pie crust on top of the filling. Seal the edges by crimping them together. Cut small slits in the top crust to allow steam to escape. Brush the crust with the beaten egg for a nice golden finish.

              Bake the Pie: Bake the pot pie in the preheated oven for about 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

                Let it Cool: Once baked, remove the pot pie from the oven and allow it to cool for about 10 minutes before slicing. This will help the filling set a little.
