2 cups cooked white rice (can use brown rice if preferred)

2 cups cooked chicken, shredded or diced (rotisserie chicken works great)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth (low-sodium)

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tablespoon olive oil

½ cup bread crumbs (optional for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.

      Combine the Base: In a mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, chicken broth, sautéed onion and garlic, mixed vegetables, thyme, paprika, salt, and pepper. Mix well until all ingredients are combined thoroughly.

        Transfer to Casserole Dish: Pour the chicken and rice mixture into a greased 9x13-inch casserole dish. Spread it out evenly.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the mixture.

            Optional Crunchy Topping: If you like a crispy topping, you can mix bread crumbs with a little melted butter and sprinkle that over the cheese.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25–30 minutes. Remove the foil for the last 10 minutes to allow the cheese and topping to become golden and bubbly.

                Serve & Garnish: Once baked, remove from the oven and let it sit for a few minutes. Garnish with fresh parsley if desired. Serve hot!
