Herbed Sweet Potato and Cheddar Galettes

2 medium sweet potatoes (about 1 lb), peeled and thinly sliced

1 cup sharp cheddar cheese, grated

1 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/4 cup cold unsalted butter, cut into small cubes

5-6 tablespoons ice water

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 egg (for egg wash)

Optional: Fresh herbs for garnish

Instructions
 

Make the Dough:

    - In a large mixing bowl, combine the flour, salt, black pepper, and paprika. Add the cold butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overwork it. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

        Prepare the Sweet Potatoes:

          - Preheat your oven to 400°F (200°C).

            - In a large bowl, toss the thinly sliced sweet potatoes with olive oil, chopped rosemary, thyme, and a pinch of salt and pepper. Set aside.

              Roll Out the Dough:

                - On a lightly floured surface, roll out the chilled dough into a large circle, about 1/8-inch thick. Transfer it to a baking sheet lined with parchment paper.

                  Assemble the Galettes:

                    - Sprinkle half of the grated cheddar cheese in the center of the dough, leaving a 2-inch border around the edges.

                      - Arrange the seasoned sweet potato slices over the cheese, slightly overlapping them. Top with the remaining cheddar cheese.

                        - Carefully fold the edges of the dough over the filling, pleating it as you go to create a rustic look.

                          Add Egg Wash:

                            - In a small bowl, beat the egg and brush it over the exposed dough to give it a lovely golden color while baking.

                              Bake:

                                - Bake the galette in the preheated oven for 30-35 minutes or until the crust is golden brown and the sweet potatoes are tender.

                                  Serve:

                                    - Once out of the oven, let the galette cool for a few minutes before slicing. Garnish with additional fresh herbs if desired. Serve warm as a delightful appetizer or side dish!
