Ingredients

1 sheet of puff pastry (thawed, 14 oz)

1 cup fresh ricotta cheese

1/4 cup grated Parmesan cheese

1 tablespoon fresh basil, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon fresh thyme, finely chopped

Zest of 1 lemon

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 egg (for egg wash)

Fresh basil leaves for garnish

Instructions

Preheat Oven: Set your oven to 400°F (200°C) to ensure it's ready for baking.

Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry into a large rectangle, about 1/8 inch thick. Cut into 4 equal squares (or 6 smaller squares for bite-sized pieces).

Make the Herbed Ricotta Filling: In a bowl, mix together the ricotta cheese, Parmesan cheese, chopped basil, parsley, thyme, lemon zest, salt, and pepper until well combined.

Assemble Galette Bites: On each puff pastry square, place a generous spoonful of the herbed ricotta mixture in the center, leaving about 1 inch of space around the edges. Top each with a few halved cherry tomatoes, cut side up.

Fold the Pastry Edges: Gently fold the edges of the pastry squares over the filling, pleating as you go to create a rustic look. Leave the center open to show off the filling and tomatoes.

Brush with Egg Wash: In a small bowl, whisk the egg and brush the mixture over the exposed pastry to give it a golden finish during baking.

Drizzle Olive Oil: Drizzle a bit of olive oil over the tops of each galette bite to enhance flavor and ensure a crispy texture.

Bake: Place the assembled galette bites on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden brown and puffed up.

Garnish and Serve: Remove from oven and let cool slightly. Garnish with fresh basil leaves before serving.

Enjoy your Herbed Ricotta Tomato Galette Bites as a delightful appetizer or a savory snack!
