1 cup couscous

1 1/4 cups vegetable broth (or water)

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup crumbled feta cheese (optional)

1/4 cup chickpeas, rinsed and drained (optional)

Lemon wedges for serving

Prepare the Couscous: In a medium saucepan, bring vegetable broth (or water) to a boil. Stir in the couscous, olive oil, lemon zest, salt, and pepper. Remove from heat, cover, and let it sit for about 5 minutes until the liquid is absorbed.

    Fluff the Couscous: After 5 minutes, uncover and fluff the couscous with a fork to separate the grains. Set aside to cool slightly.

      Mix the Ingredients: In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, parsley, and mint. If you're adding chickpeas and feta, fold them in at this point.
