Ingredients

For the Chimichurri:

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

1/4 cup red wine vinegar

1/2 cup extra-virgin olive oil

4 garlic cloves, minced

1 teaspoon red pepper flakes

1/2 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

For the Steak Bites:

1.5 pounds flank steak or sirloin, cut into bite-sized cubes

2 tablespoons olive oil (for cooking)

Salt and pepper, to taste

Fresh herbs for garnish (optional)

Instructions

Prepare the Chimichurri:

    - In a medium bowl, combine the parsley, cilantro, minced garlic, and red pepper flakes.

      - Slowly whisk in the olive oil and red wine vinegar until well combined.

        - Stir in lemon juice, salt, and pepper. Adjust seasoning to taste.

          - Cover and let the chimichurri sit at room temperature for at least 30 minutes to allow the flavors to meld. For best results, make it a few hours in advance or even the day before.

            Cook the Steak Bites:

              - Pat the steak cubes dry with paper towels and season liberally with salt and pepper.

                - Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil.

                  - When the oil is hot, add the steak bites in a single layer (you may need to work in batches) and sear for about 2-3 minutes on each side for medium-rare. Adjust cooking time based on your preferred doneness.

                    - Remove the steak bites from the skillet and let them rest for a couple of minutes.

                      Serve:

                        - On a serving platter, arrange the steak bites and generously drizzle with chimichurri sauce. You can serve the remaining sauce on the side.

                          - Optional: Garnish with fresh herbs for a vibrant touch.

                            Enjoy:

                              - Serve these delightful steak bites as an appetizer or a main dish, paired with your favorite side.
