1 whole chicken (about 4-5 lbs)

3 tablespoons olive oil

2 teaspoons sea salt

1 teaspoon black pepper

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

4 garlic cloves, minced

1 lemon, zested and juiced

1 cup chicken broth

1 cup heavy cream

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1/2 cup grated Parmesan cheese

Fresh herbs for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: Rinse the chicken under cold water, then pat it dry with paper towels. Place it in a large roasting pan.

      Season the Chicken: In a small bowl, combine the olive oil, sea salt, black pepper, rosemary, thyme, parsley, minced garlic, lemon zest, and lemon juice. Rub this mixture all over the chicken, making sure to get under the skin and inside the cavity.

        Roast the Chicken: Pour the chicken broth into the bottom of the roasting pan. Place the chicken breast side up, and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with its juices halfway through for added flavor and moisture.

          Make the Creamy White Sauce: While the chicken is roasting, melt the butter in a saucepan over medium heat. Add the flour and whisk continuously for about 1-2 minutes to create a roux. Slowly pour in the heavy cream while whisking until smooth. Gradually add the chicken broth collected from the roasting pan, continuing to whisk until the sauce thickens (about 5-7 minutes). Stir in the grated Parmesan cheese until melted and smooth. Season with additional salt and pepper to taste.
