  • 0.5 pound fresh green beans
  • 4 tablespoons unsalted butter
  • 2 cloves garlic
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh parsley
  • 1 teaspoon fresh lemon juice

  • 1 lemon zest

Instructions
 

  • Prep the Green Beans: Start by washing and trimming the green beans. Cut them into bite-sized pieces if desired, but keeping them whole is just as delightful.
  • Blanch the Beans: Fill a large pot with water and bring it to a boil. Add a pinch of salt to the water. Carefully drop the green beans into the boiling water and blanch for about 3-4 minutes until they are bright green and slightly tender.
  • Ice Bath: Prepare a bowl of ice water. As soon as the beans are ready, transfer them to the ice bath to stop the cooking process. Let them cool for a minute, then drain and set aside.
  • Make the Herb Butter: In a medium saucepan, melt the butter over medium heat. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.
  • Add Herbs and Lemon: Stir in the fresh thyme, parsley, and lemon juice. If you’re using lemon zest, add it now too! Season the butter mixture with salt and pepper to taste. Stir to combine and warm through for another minute.
  • Toss the Green Beans: Add the blanched green beans to the saucepan with the herb butter. Toss gently to coat all the beans in the fragrant mixture, allowing the flavors to meld for about 2-3 minutes.
  • Serve: Transfer the herb butter green beans to a serving dish. Enjoy them hot as a delightful side or let them cool slightly for a refreshing salad addition!
