Ingredients

4 cod fillets (about 6 ounces each)

1 cup fresh breadcrumbs (preferably from a rustic bread)

1/4 cup fresh parsley, finely chopped

1/4 cup fresh dill, finely chopped

2 tablespoons fresh chives, finely chopped

2 cloves garlic, minced

Zest of 1 lemon

1/4 cup grated Parmesan cheese

4 tablespoons olive oil

Salt and pepper to taste

Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Herb Mixture: In a medium bowl, combine the fresh breadcrumbs, chopped parsley, dill, chives, minced garlic, lemon zest, and grated Parmesan cheese. Mix well to ensure the herbs and cheese are evenly distributed.

Season the Cod: Pat the cod fillets dry with paper towels and place them on the prepared baking sheet. Drizzle the olive oil over the fillets, then season them with salt and pepper to taste.

Coat the Cod: Spoon the herb and breadcrumb mixture generously over the top of each fillet. Press the mixture down lightly to help it adhere to the fish.

Bake the Cod: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the cod flakes easily with a fork and the topping is golden brown. Keep an eye on it towards the end of the cook time to prevent burning.

Serve: Once done, remove the baking sheet from the oven and let the cod cool for a couple of minutes. Serve the herb crusted cod fillets with lemon wedges on the side for an extra burst of citrus. Enjoy!
