Hearty Lentil Spinach Dhal

Ingredients
  

1 cup red lentils, rinsed and drained

4 cups vegetable broth or water

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

2 medium tomatoes, diced

1 cup fresh spinach, roughly chopped

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon turmeric powder

1 teaspoon garam masala

2 tablespoons coconut oil or vegetable oil

Salt to taste

Fresh cilantro, chopped (for garnish)

Juice of half a lime

Instructions
 

Cook the Lentils: In a large pot, combine the rinsed lentils and vegetable broth. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the lentils are soft and starting to break down, stirring occasionally.

    Sauté the Aromatics: While the lentils cook, heat the coconut oil in a pan over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant. Then, add the chopped onions. Sauté until the onions are translucent, about 5-7 minutes.

      Add Garlic and Ginger: Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until the raw smell dissipates.

        Incorporate Spices: Add the diced tomatoes, coriander powder, turmeric powder, and salt. Cook for about 5-7 minutes until the tomatoes soften and release their juices, stirring occasionally.

          Combine Mixtures: Once the lentils are cooked, pour the aromatic mixture into the pot with the lentils. Stir well to combine and add additional water if needed for a desired consistency. Let it simmer for another 5-10 minutes, allowing the flavors to meld.

            Add Spinach: Add the fresh spinach to the pot and stir until wilted. This should only take about 2 minutes.

              Finishing Touches: Remove from heat and stir in the garam masala and the lime juice. Taste and adjust salt if necessary.

                Serve: Ladle the hearty lentil spinach dhal into bowls, garnishing with chopped cilantro. Enjoy with rice, naan, or on its own!
