Hearty Lentil and Potato Soup

1 cup green or brown lentils, rinsed and drained

2 medium potatoes, diced (about 2 cups)

1 large onion, chopped

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, chopped

1 can (14.5 oz) diced tomatoes, with juices

6 cups vegetable or chicken broth

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes until they start to soften. Then add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Vegetables: Stir in the sliced carrots and chopped celery, cooking for another 3-4 minutes until they begin to soften.

      Incorporate Lentils and Spices: Add the rinsed lentils, diced potatoes, diced tomatoes (with their juices), cumin, smoked paprika, dried thyme, bay leaf, and broth to the pot. Stir well to combine.

        Bring to a Boil: Increase heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer, uncovered, for about 30-35 minutes, or until the lentils and potatoes are tender.

          Season the Soup: Check the soup and remove the bay leaf. Season with salt and pepper to taste.

            Blend for Creaminess (Optional): For a creamier texture, you can blend a portion of the soup using an immersion blender or by carefully transferring some to a blender, then returning it to the pot.
