Ingredients
  

1 lb (450g) beef sirloin, thinly sliced

2 cups mushrooms, sliced (button or cremini)

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 cup sour cream

2 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 tsp paprika

2 tbsp olive oil

2 tbsp butter

1 cup egg noodles (or any pasta of choice)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef sirloin and season with salt and pepper. Sear for about 2-3 minutes until browned but not fully cooked. Remove the beef from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Once melted, add the chopped onion and cook until translucent (about 4-5 minutes). Add the minced garlic and cook for another 1 minute until fragrant.

        Add Mushrooms: Toss in the sliced mushrooms and sauté until they start to release their moisture and turn golden brown (approx. 5-7 minutes).

          Combine Ingredients: Return the beef to the skillet. Stir in the beef broth, Worcestershire sauce, Dijon mustard, and paprika. Bring the mixture to a simmer and cook for 5-7 minutes, allowing the flavors to meld together and the sauce to reduce slightly.

            Stir in Sour Cream: Lower the heat to medium-low and stir in the sour cream until well combined. Make sure not to let the mixture boil after adding the sour cream to prevent curdling. Cook for an additional 2-3 minutes until warmed through.

              Mix with Noodles: Add the cooked egg noodles to the skillet and toss everything together until the noodles are coated in the creamy sauce.

                Serve: Taste and adjust seasoning with salt and pepper as needed. Garnish with freshly chopped parsley before serving.
