Hearty Barley Vegetable Stew

1 cup pearl barley

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, chopped

2 celery stalks, chopped

1 bell pepper, diced (any color)

1 medium zucchini, diced

1 cup mushrooms, sliced

1 can (14 oz) diced tomatoes, with juices

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

Fresh parsley, for garnish

Instructions
 

Prepare the Barley: Rinse the pearl barley under cold water in a fine-mesh sieve. Set aside.

    Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

      Add Garlic and Vegetables: Stir in the minced garlic, carrots, celery, and bell pepper. Cook for an additional 5 minutes, stirring occasionally to prevent sticking.

        Incorporate Mushrooms and Zucchini: Add the sliced mushrooms and diced zucchini to the pot and cook for another 5 minutes until they begin to soften.

          Combine Main Ingredients: Add the rinsed barley, diced tomatoes (with juices), vegetable broth, dried thyme, dried oregano, bay leaf, salt, and pepper. Stir well to combine.

            Simmer the Stew: Bring to a boil, then reduce heat to low. Cover and let it simmer for about 30-35 minutes, or until the barley is tender and the stew thickens. Stir occasionally to prevent the barley from sticking to the bottom.

              Add Greens: Stir in the chopped spinach or kale, allowing it to wilt in the heat of the stew. Taste and adjust seasoning if necessary.

                Serve: Remove the bay leaf before serving. Ladle the hearty stew into bowls and garnish with fresh parsley.
