2 medium zucchinis, diced

1 ripe avocado, peeled and pitted

1 small onion, chopped

2 cloves garlic, minced

3 cups vegetable broth (low-sodium)

1 cup coconut milk (or almond milk for a lighter option)

1 tablespoon olive oil

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro or parsley for garnish (optional)

Juice of half a lime

Instructions
 

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic, cumin, and smoked paprika, and cook for an additional minute until fragrant.

    Cook the Zucchini: Add the diced zucchinis to the pot and sauté for about 5-7 minutes until they begin to soften.

      Add Broth and Simmer: Pour in the vegetable broth, bring to a boil, and then reduce the heat to let it simmer for about 10 minutes, or until the zucchinis are tender.

        Blend the Soup: Remove the pot from the heat. Add the avocado and coconut milk to the pot. Using an immersion blender, puree the soup until smooth. (Alternatively, you can transfer the mixture to a countertop blender in batches.)

          Season and Serve: Return the pureed soup to low heat. Stir in lime juice and season with salt and pepper to taste. If the soup is too thick, add a little more broth or water to reach your desired consistency.

            Garnish and Enjoy: Serve warm, garnished with fresh cilantro or parsley. Pack it in your lunchbox and enjoy it chilled or reheated!
