1 cup grated zucchini (excess moisture squeezed out)

1/2 cup unsweetened applesauce

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 cup whole wheat flour

1/4 cup unsweetened cocoa powder

1/4 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (optional)

1/2 teaspoon cinnamon (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper or lightly grease it.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Make sure to squeeze out excess moisture using a clean kitchen towel or paper towels. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, combine the grated zucchini, applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until well mixed.

        Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon (if using).

          Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Do not overmix. If you’re using chocolate chips, fold them in now.

            Pour Into Baking Dish: Pour the brownie batter into the prepared baking dish, spreading it evenly with a spatula.

              Bake: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine). Avoid overbaking for fudgier brownies.
