1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 carrot, grated

1 cup mushrooms, chopped

1/4 cup low-sodium soy sauce or tamari

1 tablespoon hoisin sauce (optional for sweetness)

1 tablespoon rice vinegar

1 teaspoon fresh ginger, minced

1 teaspoon sesame oil

1/4 cup green onions, chopped

1 head of iceberg or butter lettuce, leaves separated

Sesame seeds for garnish

Sriracha or chili sauce (optional, for serving)

Instructions
 

Prepare the Ingredients: Gather all ingredients and prepare by dicing the onion and bell pepper, grating the carrot, and chopping the mushrooms.

    Heat the Oil: In a large skillet, heat the olive oil over medium-high heat.

      Cook the Aromatics: Add the diced onion and sauté for about 3-4 minutes until soft. Then add the minced garlic and ginger, sautéing for another minute until fragrant.

        Add the Turkey: Increase the heat to high, and add the ground turkey to the skillet. Cook for 5-7 minutes, breaking it up with a spatula until it’s browned and fully cooked.

          Incorporate Veggies: Mix in the red bell pepper, grated carrot, and chopped mushrooms. Continue to cook for another 3-4 minutes until the vegetables have softened.

            Flavor the Mixture: Pour in the soy sauce, hoisin sauce (if using), rice vinegar, and sesame oil. Stir well to combine all the flavors, cooking for another 2-3 minutes until everything is heated through.
