Ingredients

2 cups fresh strawberries, hulled and sliced

2 tablespoons honey or maple syrup (adjust for sweetness)

2 tablespoons chia seeds

1 teaspoon vanilla extract

A pinch of salt

1 tablespoon lemon juice (optional, for a tangy flavor)

Instructions

Prepare the Strawberries: In a medium saucepan, add the sliced strawberries. Use a fork or potato masher to gently mash them until you achieve your desired consistency—chunky or smooth.

Cook the Strawberries: Over medium heat, add honey or maple syrup, vanilla extract, and a pinch of salt to the mashed strawberries. Stir well to combine. Cook for about 5-7 minutes, stirring occasionally, until the mixture begins to bubble and the strawberries soften further.

Add Chia Seeds: Remove the saucepan from heat and stir in the chia seeds. If you prefer a tangy flavor, add the lemon juice at this point. Mix thoroughly to ensure the chia seeds are well distributed throughout the strawberry mixture.

Let it Thicken: Allow the mixture to sit for about 10-15 minutes at room temperature. This will enable the chia seeds to absorb some of the liquid, helping the jam thicken naturally.

Cool Down: After the jam has cooled to room temperature, transfer it to a clean jar or airtight container. Seal tightly and refrigerate. The chia jam will continue to thicken as it cools.

Serve and Enjoy: Your healthy strawberry chia jam is now ready! Spread it on toast, swirl it into yogurt, or use it as a topping for pancakes. Enjoy the fruity goodness!
