2 cups cauliflower florets

2 cups baby carrots, halved

1 red bell pepper, diced

1 yellow bell pepper, diced

1 zucchini, sliced into half moons

1 tablespoon olive oil

1 packet (1 oz) ranch seasoning mix (or homemade ranch seasoning)

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large mixing bowl, combine the broccoli, cauliflower, baby carrots, red and yellow bell peppers, and zucchini.
