Healthy Garlic Cheddar Cauliflower Soup Recipe

Ingredients
  

1 large head of cauliflower, chopped into florets

1 medium onion, diced

4 cloves garlic, minced

2 tablespoons olive oil

4 cups vegetable broth (low sodium)

1 cup unsweetened almond milk (or any milk of your choice)

1 cup sharp cheddar cheese, shredded (or a dairy-free alternative)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until the onion becomes translucent. Add the minced garlic and cook for another minute until fragrant.

    Cook Cauliflower: Add the cauliflower florets to the pot along with the vegetable broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 15-20 minutes, or until the cauliflower is tender.

      Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender.

        Add Milk and Season: Return the blended soup to low heat and stir in the almond milk, shredded cheddar cheese, dried thyme, and smoked paprika. Mix until the cheese is melted and the soup is heated through. Taste and season with salt and pepper as needed.

          Serve: Ladle the soup into bowls, and garnish with freshly chopped parsley for a pop of color.
