2 cups rolled oats

1 ½ cups diced apples (about 2 medium apples)

1/2 cup unsweetened almond butter (or peanut butter)

1/3 cup honey or maple syrup

1/2 cup almond flour (or whole wheat flour)

1/4 cup chopped walnuts or pecans (optional)

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup dried cranberries or raisins (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond butter and honey (or maple syrup). Use a mixing spoon or spatula to blend until smooth. Stir in the vanilla extract.

      Add Dry Ingredients: To the bowl, add the rolled oats, almond flour, diced apples, cinnamon, and salt. Mix until all ingredients are evenly combined. If you’re using walnuts or dried fruits, fold them into the mixture at this point.

        Spread Mixture: Transfer the mixture into the prepared baking dish. Spread it evenly, using a spatula to press down firmly to ensure the mixture holds together while baking.

          Bake: Place the baking dish in the oven and bake for 25-30 minutes or until the edges are golden brown. The center should feel firm to the touch.

            Cool and Cut: Remove the bars from the oven and let them cool in the baking dish for about 10 minutes. Use the parchment paper overhang to lift the bars out of the dish. Allow to cool completely on a wire rack before cutting into squares or rectangles.
