Hatch Chili Veggie Breakfast Pizza

1 pre-made pizza dough (store-bought or homemade)

4 large eggs

1 cup grated mozzarella cheese

1/2 cup crumbled feta cheese

1 cup diced hatch green chiles (roasted or canned)

1 cup diced bell peppers (any color)

1/2 cup sliced red onion

1 cup baby spinach

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

    Prepare the Dough: Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer to a parchment-lined baking sheet or a pizza peel if using a stone.

      Sauté the Veggies: In a skillet, heat the olive oil over medium heat. Add the diced bell peppers and red onion. Sauté for about 5-7 minutes until softened. Stir in the baby spinach and hatch green chiles, cooking for another 2-3 minutes. Season with ground cumin, salt, and pepper. Remove from heat.

        Add the Cheese: Evenly spread the sautéed vegetable mixture across the prepared pizza dough. Sprinkle the grated mozzarella cheese on top, followed by crumbled feta.

          Create the Wells for Eggs: Use a spoon to make four small wells in the cheese and veggie mixture, making sure they are evenly spaced.

            Crack the Eggs: Carefully crack one egg into each well, being mindful not to break the yolks. Sprinkle a little salt and pepper on top of the eggs.

              Bake the Pizza: Transfer the pizza to the hot oven (or pizza stone) and bake for 12-15 minutes, or until the edges are golden brown and the egg whites are set but the yolks are still runny.

                Garnish and Serve: Once baked, remove the pizza from the oven. Garnish with fresh cilantro and serve hot with lime wedges on the side for an added zest.
