1 cup fresh corn kernels (or canned, drained)

1 cup Hatch green chilies, roasted, peeled, and diced

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/4 cup milk

1/2 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup green onions, finely chopped

Oil for frying (vegetable or canola)

Prepare the Hatch Chili: If using fresh Hatch chilies, roast them over an open flame until charred. Place them in a plastic bag for 10 minutes to steam, then peel off the skins, remove seeds, and chop. If using canned chilies, ensure they’re well-drained and diced.

    Mix the Dry Ingredients: In a large mixing bowl, combine the flour, cornmeal, baking powder, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the eggs and milk until well blended.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix.

          Fold in the Key Ingredients: Add the corn kernels, Hatch chilies, and green onions to the batter, folding them in gently until evenly distributed.
