Hatch Chili Chicken Soup

1 lb boneless, skinless chicken thighs

2 cups roasted Hatch green chiles, peeled and chopped (fresh or canned)

1 medium onion, diced

4 cloves garlic, minced

1 cup corn kernels (fresh, frozen, or canned)

1 can (15 oz) black beans, rinsed and drained

4 cups chicken broth

1 tsp ground cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Tortilla chips (for serving)

Instructions
 

Prepare the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken thighs and season with salt, pepper, cumin, and smoked paprika. Cook for about 5-7 minutes per side until the chicken is browned and almost cooked through. Remove from the pot and set aside.

    Sauté Aromatics: In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Chiles and Corn: Incorporate the chopped Hatch green chiles and corn. Stir and let everything cook together for 2-3 minutes, allowing the flavors to meld.

        Simmer the Soup: Pour in the chicken broth, add the black beans, and mix well. Return the chicken thighs to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the chicken is cooked through and tender.

          Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup, mixing it in well.
