Hatch Chili Chicken Nachos for Lunch

1 pound cooked chicken breast, shredded

2 cups tortilla chips

1 cup Hatch green chilies, diced (fresh or roasted)

1 cup pepper jack cheese, shredded

1 cup cheddar cheese, shredded

1/2 cup black beans, drained and rinsed

1/4 cup red onion, finely chopped

1/2 cup diced tomatoes

1/4 cup fresh cilantro, chopped

1/2 avocado, sliced

1 jalapeño, thinly sliced (optional, for extra heat)

1/2 cup sour cream

1/4 cup pickled jalapeños (optional)

Olive oil, for drizzling

Salt and pepper, to taste

Instructions
 

Preheat your oven to 375°F (190°C).

    In a bowl, combine the shredded chicken with diced Hatch green chilies, black beans, red onion, and diced tomatoes. Season with salt and pepper to taste.

      On a large baking sheet, evenly spread out the tortilla chips.

        Layer the chicken mixture evenly over the tortilla chips.

          Sprinkle the shredded pepper jack and cheddar cheese generously over the nachos.

            Optional: For extra kick, add sliced jalapeños over the cheese.

              Drizzle a little olive oil over the top of the nachos to help them crisp up in the oven.

                Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and top with sliced avocado, fresh cilantro, and pickled jalapeños if using.

                    Serve immediately with sour cream on the side for dipping.
