1 pound ground beef (80/20 for optimal flavor)

1 cup cooked rice (white or brown)

2 cups fresh Hatch green chilies, roasted, peeled, and chopped (substitute with canned if unavailable)

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 cup beef broth

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ cup shredded cheddar cheese (optional)

¼ cup fresh cilantro, chopped (for garnish)

2 tablespoons vegetable oil

Prepare the Chilies: If using fresh Hatch chilies, roast them over an open flame or under a broiler until charred on all sides. Let them steam in a covered bowl for about 10 minutes. Peel off the skins, remove the seeds, and chop the chilies. If using canned, simply drain and chop.

    Sauté Aromatics: In a large skillet, heat the vegetable oil over medium-high heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then add the minced garlic and cook for an additional minute until fragrant.

      Brown the Beef: Push the onion and garlic to one side of the skillet and add the ground beef. Break it up with a spatula and cook for about 5-7 minutes until browned and cooked through. Drain any excess fat if necessary.
