1 cup fresh cranberries (or ½ cup dried cranberries if not available)

1 cup walnuts, roughly chopped

1 medium apple, diced (preferably a crisp variety like Honeycrisp or Fuji)

1 cup feta cheese, crumbled

½ cup red onion, thinly sliced

½ cup sliced cucumber

½ cup pomegranate seeds (optional, for garnish)

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon maple syrup

Salt and pepper to taste
