Ingredients

1 pound elbow macaroni

1 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup diced celery

1 cup diced bell peppers (mix of red and green for color)

1/2 cup finely chopped red onion

1 cup cherry tomatoes, halved

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

1/2 cup sweet pickle relish

Optional: 1/4 cup chopped cooked bacon for a smoky twist

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Prepare the Dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper. Whisk until smooth and well combined.

Mix in the Vegetables: Add the diced celery, bell peppers, red onion, cherry tomatoes, and dill to the dressing. Stir gently to coat the veggies evenly with the dressing.

Combine with Pasta: Once the macaroni has cooled, add it to the mixing bowl with the vegetable and dressing mixture. Gently fold everything together until the pasta is well coated.

Add Pickle Relish: Stir in the sweet pickle relish and the optional bacon bits, if using. Taste and adjust the seasoning with more salt and pepper as needed.

Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld together (overnight is best for maximum flavor). Serve chilled and enjoy!
