1 cup natural peanut butter (smooth or crunchy)

⅓ cup pure maple syrup or honey

1 teaspoon vanilla extract

1 cup dark chocolate chips (70% cocoa or higher)

2 tablespoons coconut oil

A pinch of sea salt

Optional toppings: chopped nuts, sea salt flakes, or cocoa powder

Instructions
 

Prepare the Muffin Pan: Line a muffin tin with paper liners or silicone molds to easily remove the peanut butter cups once they are set.

    Make the Peanut Butter Filling: In a mixing bowl, combine the peanut butter, maple syrup (or honey), vanilla extract, and a pinch of sea salt. Mix until smooth and creamy. If you prefer a chunkier filling, you can fold in some chopped nuts.

      Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

        Assemble the Cups: Spoon a small amount of the melted chocolate (about 1 tablespoon) into the bottom of each muffin liner, spreading it to coat the bottom. Place the muffin tin in the freezer for about 10-15 minutes, or until the chocolate hardens.

          Add the Filling: Once the chocolate base is firm, remove the muffin tin from the freezer. Add about 1-2 tablespoons of the peanut butter filling on top of the hardened chocolate layer.

            Top with More Chocolate: Pour another tablespoon of melted chocolate over the peanut butter filling, ensuring it is fully covered. Use a spatula to smooth the chocolate on top if needed.

              Optional Toppings: If desired, sprinkle toppings like chopped nuts, a few flakes of sea salt, or a dusting of cocoa powder on top of the melted chocolate before it sets.

                Chill: Place the muffin tin back into the freezer for another 30-60 minutes, or until the peanut butter cups are completely set.

                  Serve: Once set, remove the cups from the muffin tin and peel back the liners. Enjoy these guilt-free treats straight away or store them in an airtight container in the refrigerator for up to a week!
