2 medium zucchinis, sliced into ½-inch thick rounds

250g halloumi cheese, sliced into ½-inch thick slices

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh lemon juice (from 1 lemon)

Fresh mint or basil leaves for garnish

Prepare the Marinade: In a small bowl, whisk together the olive oil, garlic powder, dried oregano, salt, and black pepper.

    Marinate the Zucchini: Place the sliced zucchini rounds in a large bowl. Pour half of the marinade over the zucchini and toss until well coated. Let them sit for about 15 minutes to soak up the flavors.

      Prepare the Halloumi: In the same bowl, drizzle the remaining marinade over the halloumi slices, ensuring they are evenly coated. Let the halloumi marinate while the zucchini sits.

        Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates lightly to prevent sticking.

          Grill the Zucchini: Once the grill is hot, add the marinated zucchini rounds. Grill for about 3-4 minutes per side until they are nicely marked and tender. Remove them from the grill and set aside.
