Ingredients
  

2 pieces of store-bought flatbread (or naan)

1 cup cherry tomatoes, halved

1 medium zucchini, thinly sliced

1 bell pepper (any color), chopped

1 small red onion, thinly sliced

1 cup fresh spinach leaves

1 cup shredded mozzarella cheese

1/4 cup crumbled feta cheese (optional)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling (optional)

Instructions
 

Prep the Vegetables: In a large mixing bowl, combine the cherry tomatoes, zucchini, bell pepper, red onion, and spinach. Add the olive oil, dried oregano, garlic powder, salt, and pepper. Toss to coat the veggies evenly.

    Grill the Veggies: Preheat your grill to medium-high heat or use a grill pan on the stove. Place the vegetable mix in a grill basket or skewers for easy handling. Grill for about 8-10 minutes, or until the veggies are tender and have nice grill marks. Stir occasionally to ensure even cooking. Remove from heat and set aside.

      Prepare the Flatbread: While the veggies are grilling, place the flatbreads directly on the grill or on a baking sheet. Grill each piece for about 2-3 minutes on one side until slightly crisp.

        Assemble the Pizza: Flip the flatbreads over and sprinkle a base layer of shredded mozzarella cheese on each. Layer the grilled veggies evenly on top of the cheese, then sprinkle additional mozzarella and crumbled feta cheese (if using) over the veggies.

          Grill the Pizzas: Close the grill lid and cook for another 5-7 minutes, or until the cheese is melted and bubbly. If using a grill pan, you can cover it with a lid to help the cheese melt.

            Serve: Remove the grilled veggie flatbread pizzas from the grill and let them cool for a minute. Garnish with fresh basil leaves and drizzle with balsamic glaze, if desired. Cut into slices and serve warm.
