4 ears of fresh sweet corn, husked

2 ripe avocados, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon chili powder

Salt and pepper, to taste

Feta cheese, crumbled (optional)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn on the grill, turning occasionally, for about 10-12 minutes or until charred and tender. Remove from grill and let cool. Once cooled, cut the kernels off the cob.

    Prepare the Dressing: In a small bowl, combine the lime juice, olive oil, chili powder, salt, and pepper. Whisk until well combined and set aside.

      Assemble the Salad: In a large mixing bowl, combine the grilled corn kernels, diced avocados, red bell pepper, red onion, cherry tomatoes, and cilantro.

        Dress the Salad: Pour the lime dressing over the salad mixture and gently toss to combine, being careful not to mash the avocados.
