Juice of 1 lime

For the Avocado Corn Salsa:

1 cup corn kernels (fresh, frozen, or canned)

1 ripe avocado, diced

1 small red onion, finely chopped

1 jalapeño, minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Sauce:

1/2 cup Greek yogurt or sour cream

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

1 garlic clove, minced

Juice of 1/2 lime

Salt and pepper to taste

To Serve:

Cooked rice or quinoa

Marinate the Shrimp: In a bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, lime juice, salt, and pepper. Add the shrimp and toss to coat. Let marinate for at least 15-30 minutes.
